- 1 tablespoon unsweetened cocoa powder, sifted
Instructions
- Preheat the oven to 350°F and line 2 baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, espresso powder, baking powder, and salt.
- In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and creamy. Beat in the egg, 1 teaspoon vanilla extract, and milk.
- Add the dry ingredients to the wet ingredients and mix just until a soft dough forms.
- Scoop the dough into 16 even mounds onto the prepared baking sheets, leaving space between each one. Gently flatten the tops.
- Bake for 9 to 11 minutes, until the edges are set and the centers are still soft. Let the cookies rest on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- In a chilled bowl, beat the mascarpone, powdered sugar, heavy cream, and remaining 1 teaspoon vanilla extract until thick, smooth, and fluffy.
- Spoon or pipe the mascarpone topping onto the cooled cookies.
- Dust lightly with sifted cocoa powder and chill for 30 minutes before serving.
Notes
- Do not overbake the cookies, they should stay soft in the center.
- Make sure the cookies are fully cool before adding the mascarpone topping.
- Sift the cocoa powder for a clean, even finish.
- Store topped cookies in the refrigerator for up to 3 days.
