Description

Soft espresso cookies topped with fluffy mascarpone cream and a delicate dusting of cocoa powder. They bring the classic flavors of tiramisu into an easy, elegant handheld dessert.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 tablespoon espresso powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon fine salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • 8 ounces mascarpone cheese
  • 3/4 cup powdered sugar
  • 1/2 cup heavy cream, cold
  • 1 teaspoon vanilla extract
  • 1 tablespoon unsweetened cocoa powder, sifted


Instructions

  1. Preheat the oven to 350°F and line 2 baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, espresso powder, baking powder, and salt.
  3. In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and creamy. Beat in the egg, 1 teaspoon vanilla extract, and milk.
  4. Add the dry ingredients to the wet ingredients and mix just until a soft dough forms.
  5. Scoop the dough into 16 even mounds onto the prepared baking sheets, leaving space between each one. Gently flatten the tops.
  6. Bake for 9 to 11 minutes, until the edges are set and the centers are still soft. Let the cookies rest on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  7. In a chilled bowl, beat the mascarpone, powdered sugar, heavy cream, and remaining 1 teaspoon vanilla extract until thick, smooth, and fluffy.
  8. Spoon or pipe the mascarpone topping onto the cooled cookies.
  9. Dust lightly with sifted cocoa powder and chill for 30 minutes before serving.

Notes

  • Do not overbake the cookies, they should stay soft in the center.
  • Make sure the cookies are fully cool before adding the mascarpone topping.
  • Sift the cocoa powder for a clean, even finish.
  • Store topped cookies in the refrigerator for up to 3 days.
