- 12 ounces bowtie pasta
- 3 cups roasted corn kernels
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 cup crumbled cotija cheese
- 3 tablespoons fresh lime juice
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 4 green onions, sliced
- 1/3 cup chopped fresh cilantro
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Cook the bowtie pasta in salted boiling water according to package directions until tender. Drain and let cool slightly.
- Heat a skillet over medium high heat and roast the corn until lightly charred and fragrant.
- In a medium bowl, whisk together mayonnaise, sour cream, lime juice, garlic powder, chili powder, salt, and black pepper until smooth.
- In a large mixing bowl, combine cooked pasta, roasted corn, sliced green onions, chopped cilantro, and cotija cheese.
- Pour the dressing over the pasta mixture and toss gently until evenly coated.
- Taste and adjust seasoning if needed.
- Chill the salad for at least 30 minutes before serving.
- Garnish with extra cotija cheese and cilantro before serving if desired.
Notes
- Fresh grilled corn adds the best smoky flavor.
- For extra heat, add diced jalapeños or more chili powder.
