Description

A creamy and flavor-packed pasta salad inspired by classic street corn, loaded with roasted corn, cotija cheese, fresh herbs, and a tangy lime dressing. Perfect for cookouts, lunches, and easy make-ahead meals.

  • 12 ounces bowtie pasta
  • 3 cups roasted corn kernels
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup crumbled cotija cheese
  • 3 tablespoons fresh lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 4 green onions, sliced
  • 1/3 cup chopped fresh cilantro
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Cook the bowtie pasta in salted boiling water according to package directions until tender. Drain and let cool slightly.
  2. Heat a skillet over medium high heat and roast the corn until lightly charred and fragrant.
  3. In a medium bowl, whisk together mayonnaise, sour cream, lime juice, garlic powder, chili powder, salt, and black pepper until smooth.
  4. In a large mixing bowl, combine cooked pasta, roasted corn, sliced green onions, chopped cilantro, and cotija cheese.
  5. Pour the dressing over the pasta mixture and toss gently until evenly coated.
  6. Taste and adjust seasoning if needed.
  7. Chill the salad for at least 30 minutes before serving.
  8. Garnish with extra cotija cheese and cilantro before serving if desired.
