Description

Tender smoky pulled beef slow-cooked in rich barbecue sauce, piled onto toasted brioche buns with melted cheddar cheese, crunchy coleslaw, and tangy pickles for the ultimate comfort food sandwich.

  • 3 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 2 cups smoky barbecue sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 brioche buns
  • 6 slices cheddar cheese
  • 3 cups shredded green cabbage
  • 1 cup shredded carrots
  • 1/2 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1/2 cup pickle slices


Instructions

  1. Preheat oven to 325°F and prepare a large Dutch oven.
  2. Mix smoked paprika, garlic powder, onion powder, salt, and black pepper in a small bowl.
  3. Heat olive oil in the Dutch oven over medium-high heat. Rub seasoning mixture over the beef chuck roast and sear on all sides until browned.
  4. Pour barbecue sauce over the beef, cover the Dutch oven, and transfer to the oven.
  5. Cook for 3 1/2 hours or until the beef becomes fork tender.
  6. Remove beef from the pot and shred using two forks. Return shredded beef to the sauce and mix well.
  7. In a mixing bowl, combine shredded cabbage, shredded carrots, mayonnaise, and apple cider vinegar to make the coleslaw.
  8. Toast the brioche buns lightly.
  9. Assemble sandwiches with pulled beef, cheddar cheese slices, coleslaw, and pickle slices.
  10. Serve immediately while warm.

  • Toast the buns lightly to prevent sogginess.
  • The beef tastes even better the next day after the flavors develop further.
  • Store leftover beef in an airtight container in the refrigerator for up to 4 days.
  • For extra smoky flavor, add a few drops of liquid smoke to the barbecue sauce.
