Description

Ingredients

  • 1 puff pastry sheet
  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 1 cup bell peppers, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 cup feta cheese, crumbled
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon dried herbs


Instructions

  1. Preheat oven to 200°C.
  2. Heat olive oil in a skillet, sauté onion and garlic until soft. Add mushrooms, bell peppers, and spinach, cook until tender and moisture is reduced.
  3. Line a baking sheet with parchment paper.
  4. Roll out puff pastry, spread the cooled vegetable mixture evenly, sprinkle feta cheese, then fold and seal edges.
  5. Place on baking sheet and bake for 30 minutes until golden brown and crisp.
  6. Let it rest for a few minutes before slicing.
  7. Slice and serve warm.
