- 2 cups fresh spinach
- 1 cup mushrooms, sliced
- 1 cup bell peppers, diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1/2 cup feta cheese, crumbled
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon dried herbs
Instructions
- Preheat oven to 200°C.
- Heat olive oil in a skillet, sauté onion and garlic until soft. Add mushrooms, bell peppers, and spinach, cook until tender and moisture is reduced.
- Line a baking sheet with parchment paper.
- Roll out puff pastry, spread the cooled vegetable mixture evenly, sprinkle feta cheese, then fold and seal edges.
- Place on baking sheet and bake for 30 minutes until golden brown and crisp.
- Let it rest for a few minutes before slicing.
- Slice and serve warm.
