Description

Creamy, cheesy enchiladas filled with tender chicken and topped with rich queso sauce, perfect for a quick and comforting dinner.


Ingredients

  • 8 medium flour tortillas
  • 2 cups shredded cooked chicken
  • 2 cups queso cheese sauce
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 tablespoons chopped cilantro
  • 1/2 cup diced onion
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Salt and black pepper to taste


Instructions

  1. Preheat oven to 180°C.
  2. In a bowl, mix shredded chicken with half of the queso sauce, diced onion, garlic, salt, and pepper.
  3. Lightly grease a baking dish with olive oil.
  4. Fill each tortilla with the chicken mixture, roll tightly, and place seam-side down in the baking dish.
  5. Pour remaining queso sauce over the enchiladas and sprinkle shredded cheddar cheese on top.
  6. Bake for 20 minutes until cheese is melted and bubbly.
  7. Remove from oven, let rest for a few minutes, then top with sour cream and chopped cilantro before serving.
