- 8 medium flour tortillas
- 2 cups shredded cooked chicken
- 2 cups queso cheese sauce
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 2 tablespoons chopped cilantro
- 1/2 cup diced onion
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- Salt and black pepper to taste
Instructions
- Preheat oven to 180°C.
- In a bowl, mix shredded chicken with half of the queso sauce, diced onion, garlic, salt, and pepper.
- Lightly grease a baking dish with olive oil.
- Fill each tortilla with the chicken mixture, roll tightly, and place seam-side down in the baking dish.
- Pour remaining queso sauce over the enchiladas and sprinkle shredded cheddar cheese on top.
- Bake for 20 minutes until cheese is melted and bubbly.
- Remove from oven, let rest for a few minutes, then top with sour cream and chopped cilantro before serving.
Notes
- Warm tortillas before filling to prevent cracking.
