Description

Crisp, golden Mexican-style palmiers made with puff pastry, cinnamon sugar, and a light caramelized crunch. These sweet bakery-inspired pastries are simple, flaky, and perfect with coffee or hot chocolate.


Ingredients

  • 1 sheet puff pastry, about 8.5 ounces, thawed but still cold
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon fine salt
  • 1 tablespoon all-purpose flour, only for dusting if needed


Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. In a small bowl, stir together the granulated sugar, ground cinnamon, and fine salt.
  3. Sprinkle a clean work surface with about half of the cinnamon sugar mixture.
  4. Place the cold puff pastry sheet on top, then sprinkle the remaining cinnamon sugar over the pastry.
  5. Gently roll the pastry to press the sugar into both sides.
  6. Fold the left and right edges toward the center so they meet, then fold each side inward again.
  7. Fold one half over the other like closing a book.
  8. Chill the folded pastry for 10 minutes if it feels soft.
  9. Slice the folded pastry into 1/2 inch pieces and place them cut side up on the prepared baking sheet, leaving space between each one.
  10. Bake for 10 minutes, carefully flip each pastry, then bake for another 6 to 8 minutes until golden, crisp, and caramelized.
  11. Let the pastries rest on the baking sheet for 3 minutes, then transfer them to a cooling rack.
  12. Serve at room temperature once crisp.

  • Keep puff pastry cold for the cleanest layers and best rise.
  • Use parchment paper because melted sugar can stick firmly to the pan.
  • Watch closely during the final minutes because caramelized sugar can darken quickly.
