Ingredients

  • 4 salmon fillets (about 170 grams each)
  • 1 cup orzo pasta
  • 1 large lemon (zested and juiced)
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 2 cups vegetable broth
  • 1/2 cup parmesan cheese, grated
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Heat a large skillet over medium heat and add olive oil.
  2. Season the salmon with salt and pepper.
  3. Place the salmon in the skillet and cook for 4 to 5 minutes per side until golden, then remove and set aside.
  4. In the same skillet, add garlic and sauté briefly, then stir in orzo and toast lightly.
  5. Add vegetable broth and lemon juice, then let the orzo simmer, stirring occasionally, for about 10 minutes until tender and creamy.
  6. Stir in parmesan cheese, butter, lemon zest, and parsley.
  7. Return the salmon to the skillet, then serve warm and enjoy.
