- 4 salmon fillets (about 170 grams each)
- 1 cup orzo pasta
- 1 large lemon (zested and juiced)
- 3 garlic cloves, minced
- 2 tablespoons olive oil
- 2 cups vegetable broth
- 1/2 cup parmesan cheese, grated
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon butter
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Heat a large skillet over medium heat and add olive oil.
- Season the salmon with salt and pepper.
- Place the salmon in the skillet and cook for 4 to 5 minutes per side until golden, then remove and set aside.
- In the same skillet, add garlic and sauté briefly, then stir in orzo and toast lightly.
- Add vegetable broth and lemon juice, then let the orzo simmer, stirring occasionally, for about 10 minutes until tender and creamy.
- Stir in parmesan cheese, butter, lemon zest, and parsley.
- Return the salmon to the skillet, then serve warm and enjoy.

- Use freshly grated parmesan for best flavor and melting.
- Add extra broth if the orzo becomes too thick.
