- 6 bone-in chicken thighs
- 1 1/2 cups long grain white rice
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup fresh cilantro, chopped
- 4 garlic cloves, minced
- 1 medium yellow onion, diced
- 3 cups chicken broth
- 2 tablespoons olive oil
- 1 whole lime, cut into wedges
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 375°F. Season chicken thighs with salt, black pepper, cumin, and paprika.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Place chicken thighs skin-side down and cook for 5 to 6 minutes until crispy and golden. Remove and set aside.
- Add diced onion to the skillet and cook until softened. Stir in minced garlic and cook for 1 minute.
- Add long grain white rice and black beans to the skillet. Stir gently to combine.
- Pour in chicken broth and stir lightly. Return chicken thighs to the skillet on top of the rice mixture.
- Transfer the skillet to the oven and bake uncovered for 30 to 35 minutes until the rice is tender and the chicken is fully cooked.
- Remove from oven and let rest for 5 minutes. Stir chopped cilantro into the rice and squeeze fresh lime juice over the top.
- Serve warm with extra lime wedges and fresh cilantro if desired.
