Juicy crispy chicken thighs baked over fluffy cilantro rice and hearty black beans in one skillet for a comforting, flavor-packed dinner that feels both fresh and cozy.


Ingredients

  • 6 bone-in chicken thighs
  • 1 1/2 cups long grain white rice
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup fresh cilantro, chopped
  • 4 garlic cloves, minced
  • 1 medium yellow onion, diced
  • 3 cups chicken broth
  • 2 tablespoons olive oil
  • 1 whole lime, cut into wedges
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Preheat oven to 375°F. Season chicken thighs with salt, black pepper, cumin, and paprika.
  2. Heat olive oil in a large oven-safe skillet over medium-high heat. Place chicken thighs skin-side down and cook for 5 to 6 minutes until crispy and golden. Remove and set aside.
  3. Add diced onion to the skillet and cook until softened. Stir in minced garlic and cook for 1 minute.
  4. Add long grain white rice and black beans to the skillet. Stir gently to combine.
  5. Pour in chicken broth and stir lightly. Return chicken thighs to the skillet on top of the rice mixture.
  6. Transfer the skillet to the oven and bake uncovered for 30 to 35 minutes until the rice is tender and the chicken is fully cooked.
  7. Remove from oven and let rest for 5 minutes. Stir chopped cilantro into the rice and squeeze fresh lime juice over the top.
  8. Serve warm with extra lime wedges and fresh cilantro if desired.
