Description

A comforting and flavorful bowl with tender chicken coated in a creamy miso mayonnaise sauce, served over fluffy rice and topped with fresh crunchy vegetables.


Ingredients

  • 500 grams chicken thighs
  • 2 cups white rice (uncooked)
  • 1/3 cup mayonnaise
  • 2 tablespoons miso paste
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 cup cucumber (sliced)
  • 1 cup carrots (shredded)
  • 1 tablespoon sesame seeds
  • 2 tablespoons green onions (chopped)


Instructions

  1. Preheat a nonstick pan over medium heat and prepare rice according to package instructions.
  2. In a bowl, combine mayonnaise, miso paste, soy sauce, honey, and rice vinegar until smooth.
  3. Lightly oil the pan to prevent sticking.
  4. Cut chicken into bite sized pieces and coat lightly with part of the sauce.
  5. Cook the chicken for 6 to 8 minutes until golden and fully cooked.
  6. Toss cooked chicken with the remaining sauce until well coated.
  7. Serve by placing rice in bowls, topping with chicken, cucumber, carrots, sesame seeds, and green onions.
