Ingredients

  • 2 salmon fillets, about 6 ounces each
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt, divided
  • 1/2 teaspoon black pepper
  • 5 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1 large mango, diced
  • 1 large avocado, sliced
  • 1/2 cup fresh cilantro
  • 3 tablespoons lime juice
  • 1 teaspoon honey
  • 2 tablespoons water


Instructions

  1. Heat a nonstick skillet over medium heat.
  2. In a small bowl, mix paprika, garlic powder, 1/2 teaspoon salt, and black pepper. Rub the seasoning mixture evenly over the salmon fillets.
  3. Add olive oil to the skillet and let it heat for about 30 seconds.
  4. Place the salmon into the skillet and cook for 4 to 5 minutes per side until golden brown and fully cooked.
  5. While the salmon cooks, arrange romaine lettuce, cherry tomatoes, diced mango, and avocado in a large serving bowl.
  6. Blend cilantro, lime juice, honey, water, and remaining 1/2 teaspoon salt until smooth to create the dressing.
  7. Place the cooked salmon over the salad.
  8. Drizzle the cilantro lime dressing over the salad and serve immediately.
