- 6 chicken thighs, bone-in and skinless
- 1/4 cup fresh parsley, finely chopped
- 2 teaspoons fresh thyme
- 2 teaspoons fresh rosemary, finely chopped
- 4 garlic cloves, minced
- 1 lemon, zested and juiced
- 3 tablespoons olive oil
- 3/4 cup breadcrumbs
- 1/2 cup grated parmesan cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 200°C.
- In a mixing bowl, combine parsley, thyme, rosemary, garlic, lemon zest, breadcrumbs, parmesan, salt, and black pepper. Add olive oil and mix until slightly moist.
- Lightly grease a baking dish.
- Place chicken thighs in the dish and press the herb mixture firmly onto each piece.
- Bake for 30 to 35 minutes until the chicken is cooked through and the crust is golden brown.
- Remove from the oven and drizzle with fresh lemon juice.
- Serve warm and enjoy.
