Description
Smoky grilled sausage grinders loaded with rich grilled tomato sauce, melted provolone cheese, and charred peppers and onions on toasted hoagie rolls.

- 6 Italian sausages
- 6 hoagie rolls
- 6 large Roma tomatoes
- 1 large yellow onion, sliced
- 2 bell peppers, sliced
- 4 garlic cloves, minced
- 2 tablespoons olive oil
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 6 slices provolone cheese
- 2 tablespoons fresh basil, chopped
Instructions
- Preheat an outdoor grill to medium-high heat and lightly oil the grates.
- Toss sliced onions and peppers with olive oil, salt, and black pepper.
- Grill the tomatoes until charred and softened, about 8 minutes.
- Grill the sausages for 12 to 15 minutes, turning occasionally until fully cooked.
- Transfer grilled tomatoes to a saucepan and crush lightly. Stir in garlic, tomato paste, oregano, and basil.
- Simmer the sauce for 10 minutes until thickened slightly.
- Add grilled onions and peppers into the sauce briefly.
- Toast the hoagie rolls lightly.
- Place sausages into rolls, spoon over grilled tomato sauce and vegetables, then top with provolone cheese.
- Serve hot while the cheese is melted and gooey.
Notes
- Toast the rolls lightly to prevent sogginess.
- Use ripe Roma tomatoes for the best flavor.
- Add crushed red pepper for extra heat if desired.
- The sauce can be prepared ahead and refrigerated for up to 3 days.
