Description

Smoky grilled sausage grinders loaded with rich grilled tomato sauce, melted provolone cheese, and charred peppers and onions on toasted hoagie rolls.


Ingredients

  • 6 Italian sausages
  • 6 hoagie rolls
  • 6 large Roma tomatoes
  • 1 large yellow onion, sliced
  • 2 bell peppers, sliced
  • 4 garlic cloves, minced
  • 2 tablespoons olive oil
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 slices provolone cheese
  • 2 tablespoons fresh basil, chopped


Instructions

  1. Preheat an outdoor grill to medium-high heat and lightly oil the grates.
  2. Toss sliced onions and peppers with olive oil, salt, and black pepper.
  3. Grill the tomatoes until charred and softened, about 8 minutes.
  4. Grill the sausages for 12 to 15 minutes, turning occasionally until fully cooked.
  5. Transfer grilled tomatoes to a saucepan and crush lightly. Stir in garlic, tomato paste, oregano, and basil.
  6. Simmer the sauce for 10 minutes until thickened slightly.
  7. Add grilled onions and peppers into the sauce briefly.
  8. Toast the hoagie rolls lightly.
  9. Place sausages into rolls, spoon over grilled tomato sauce and vegetables, then top with provolone cheese.
  10. Serve hot while the cheese is melted and gooey.

  • Toast the rolls lightly to prevent sogginess.
  • Use ripe Roma tomatoes for the best flavor.
  • Add crushed red pepper for extra heat if desired.
