Description

A fresh summer salad with warm grilled peaches, creamy burrata, peppery arugula, basil, toasted pine nuts, balsamic glaze, and honey.


Ingredients

  • 4 ripe but firm peaches, halved and pitted
  • 1 tablespoon olive oil
  • 8 ounces burrata cheese, drained
  • 2 cups baby arugula
  • 1/4 cup fresh basil leaves
  • 2 tablespoons toasted pine nuts
  • 1 tablespoon balsamic glaze
  • 2 teaspoons honey
  • 1/4 teaspoon flaky sea salt
  • 1/4 teaspoon black pepper


Instructions

  1. Heat a grill or grill pan over medium heat.
  2. Arrange the baby arugula and basil on a serving platter.
  3. Brush the cut sides of the peach halves with olive oil.
  4. Place the peaches cut side down on the grill.
  5. Grill for 3 to 4 minutes per side, until grill marks appear and the peaches are tender but not mushy.
  6. Arrange the warm peaches over the greens.
  7. Tear the drained burrata over the platter.
  8. Sprinkle with toasted pine nuts, flaky sea salt, and black pepper.
  9. Drizzle with balsamic glaze and honey.
  10. Serve right away.

Notes

  • Use ripe but firm peaches so they hold their shape on the grill.
  • Drain the burrata before serving to keep the salad from becoming watery.
