  • 2 pounds Yukon Gold potatoes, sliced into thin rounds
  • 1 1/2 pounds boneless skinless chicken thighs, cut into bite-sized pieces
  • 1 large yellow onion, thinly sliced
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Heat a large skillet over medium heat and add the olive oil.
  2. In a mixing bowl, toss the chicken pieces with paprika, salt, and black pepper until evenly coated.
  3. Add the sliced potatoes to the skillet and cook for about 12 minutes, stirring occasionally, until golden and crispy. Transfer them to a plate.
  4. Add the butter and sliced onions to the skillet. Cook until softened and caramelized, then stir in the garlic.
  5. Add the seasoned chicken pieces and cook until browned and fully cooked through.
  6. Return the crispy potatoes to the skillet and gently toss everything together.
  7. Cook for another 5 minutes so the flavors blend together.
  8. Sprinkle fresh parsley over the top and serve immediately.
