Ingredients
Scale
- 2 pounds Yukon Gold potatoes, sliced into thin rounds
- 1 1/2 pounds boneless skinless chicken thighs, cut into bite-sized pieces
- 1 large yellow onion, thinly sliced
- 2 tablespoons butter
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat a large skillet over medium heat and add the olive oil.
- In a mixing bowl, toss the chicken pieces with paprika, salt, and black pepper until evenly coated.
- Add the sliced potatoes to the skillet and cook for about 12 minutes, stirring occasionally, until golden and crispy. Transfer them to a plate.
- Add the butter and sliced onions to the skillet. Cook until softened and caramelized, then stir in the garlic.
- Add the seasoned chicken pieces and cook until browned and fully cooked through.
- Return the crispy potatoes to the skillet and gently toss everything together.
- Cook for another 5 minutes so the flavors blend together.
- Sprinkle fresh parsley over the top and serve immediately.
Notes
- Dry the potatoes well before frying for extra crispiness.
- Use a cast iron skillet if possible for the best golden texture.
- Do not overcrowd the skillet or the potatoes may steam instead of crisping.
- Leftovers reheat beautifully in a skillet over medium heat.
