- 2 large yellow onions, thinly sliced
- 3 tablespoons butter
- 1 cup shredded mozzarella cheese
- 1 cup shredded gruyere cheese
- 1/2 cup beef broth
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Heat a skillet over medium low heat and melt 2 tablespoons of butter. Add onions, garlic, salt, and pepper, then cook slowly for about 20 minutes until caramelized.
- Stir in beef broth and thyme, then cook until the liquid reduces and onions are rich and glossy.
- Heat another skillet over medium heat and add remaining butter.
- Place shredded mozzarella and gruyere cheese on one slice of bread, add caramelized onions, then top with more cheese and another slice of bread.
- Grill the sandwich until golden brown on both sides and the cheese is fully melted.
- Remove from heat, let rest briefly, then slice and serve warm.
