Description
This Freakin’ Fantastic Fried Rice is packed with fluffy jasmine rice, tender chicken, colorful vegetables, scrambled eggs, and savory soy sauce flavor. It comes together quickly in one skillet and tastes even better than takeout.

- 4 cups cold cooked jasmine rice
- 1 pound diced chicken breast
- 3 large eggs
- 1 cup diced carrots
- 1 cup frozen green peas
- 4 chopped green onions
- 4 cloves minced garlic
- 1/4 cup soy sauce
- 1 tablespoon sesame oil
- 2 tablespoons vegetable oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon sesame seeds
Instructions
- Heat a large skillet or wok over medium-high heat until hot.
- Prepare the diced chicken, chopped vegetables, beaten eggs, and sauces in separate bowls.
- Add 1 tablespoon vegetable oil to the skillet and cook the chicken for 5 to 6 minutes until fully cooked and golden. Remove and set aside.
- Add the remaining vegetable oil to the skillet. Scramble the eggs until softly cooked.
- Add garlic, carrots, peas, and green onions to the skillet. Stir-fry for 2 to 3 minutes until fragrant.
- Add the cold cooked rice and cooked chicken back into the skillet.
- Pour in soy sauce, sesame oil, salt, and black pepper. Stir-fry for 4 to 5 minutes until heated through and lightly toasted.
- Sprinkle sesame seeds over the rice and toss gently.
- Serve immediately while hot.
Notes
- Cold day-old rice gives the best texture for fried rice.
- Cook ingredients separately for better flavor and texture.
- Add chili flakes or chili sauce if you prefer extra heat.
- Store leftovers in an airtight container for up to 4 days.
