- 12 ounces penne pasta
- 1 1/2 cups freshly grated parmesan cheese
- 2 cups heavy cream
- 4 cloves garlic, minced
- 3 tablespoons butter
- 1 cup all purpose flour
- 2 large eggs, beaten
- 1 1/2 cups breadcrumbs
- 1/2 cup olive oil
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
Instructions
- Heat a large skillet over medium heat and bring a large pot of salted water to a boil.
- Place flour in one bowl, beaten eggs in another bowl, and breadcrumbs mixed with Italian seasoning in a third bowl.
- Dredge chicken in flour, dip into eggs, then coat in breadcrumbs.
- Heat olive oil in the skillet and fry chicken for 4 to 5 minutes per side until golden brown and fully cooked. Transfer to a paper towel lined plate.
- Cook penne pasta until al dente according to package instructions.
- In the same skillet, melt butter and sauté garlic for 1 minute.
- Pour in heavy cream and simmer gently.
- Whisk in parmesan cheese until smooth and creamy.
- Add cooked pasta to the sauce and toss until coated.
- Slice crispy chicken and place over the creamy pasta.
- Garnish with parsley and extra parmesan before serving.
