Ingredients

  • 1 pound chicken tenderloins
  • 12 ounces penne pasta
  • 1 1/2 cups freshly grated parmesan cheese
  • 2 cups heavy cream
  • 4 cloves garlic, minced
  • 3 tablespoons butter
  • 1 cup all purpose flour
  • 2 large eggs, beaten
  • 1 1/2 cups breadcrumbs
  • 1/2 cup olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Heat a large skillet over medium heat and bring a large pot of salted water to a boil.
  2. Place flour in one bowl, beaten eggs in another bowl, and breadcrumbs mixed with Italian seasoning in a third bowl.
  3. Dredge chicken in flour, dip into eggs, then coat in breadcrumbs.
  4. Heat olive oil in the skillet and fry chicken for 4 to 5 minutes per side until golden brown and fully cooked. Transfer to a paper towel lined plate.
  5. Cook penne pasta until al dente according to package instructions.
  6. In the same skillet, melt butter and sauté garlic for 1 minute.
  7. Pour in heavy cream and simmer gently.
  8. Whisk in parmesan cheese until smooth and creamy.
  9. Add cooked pasta to the sauce and toss until coated.
  10. Slice crispy chicken and place over the creamy pasta.
  11. Garnish with parsley and extra parmesan before serving.

  • Use freshly grated parmesan for the smoothest sauce.
  • Reserve a little pasta water to loosen the sauce if needed.
