- 300 grams pasta
- 2 boneless chicken pieces, sliced
- 1 cup heavy cream
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes
- 2 cups fresh spinach
- 1/2 cup grated parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions.
- Season the chicken with salt and black pepper.
- Heat olive oil in a large skillet over medium heat.
- Cook the chicken until golden and fully cooked, then remove and set aside.
- In the same pan, sauté the minced garlic until fragrant.
- Add sun-dried tomatoes and heavy cream, stirring well.
- Mix in grated parmesan cheese and stir until smooth.
- Add cooked pasta and fresh spinach to the sauce, tossing until coated and spinach is wilted.
- Return the chicken to the pan and mix everything together.
- Adjust seasoning and add a splash of pasta water if needed, then serve warm.
Notes
- Use freshly grated parmesan for best flavor and smooth texture
- Do not overcook spinach to keep its vibrant color
- Add reserved pasta water gradually to adjust sauce consistency
- Reheat with a splash of cream or milk to restore creaminess
