- 2 medium chicken breasts, sliced into halves
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup sun dried tomatoes, chopped
- 2 cups fresh spinach
- 1/3 cup parmesan cheese, grated
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Heat a large skillet over medium heat and add olive oil.
- Season the chicken with salt, black pepper, and Italian seasoning.
- Place the chicken in the skillet and sear for 4 to 5 minutes on each side until golden, then remove and set aside.
- In the same skillet, sauté minced garlic until fragrant.
- Add chicken broth, heavy cream, and sun dried tomatoes, then stir and let simmer gently.
- Return the chicken to the skillet and cook for 8 to 10 minutes until fully cooked.
- Stir in fresh spinach and parmesan cheese until the spinach wilts and the sauce thickens.
- Serve warm with the sauce spooned over the chicken.
Notes
- Sear the chicken well to build deeper flavor.
- Do not boil the sauce to prevent curdling.
- Add spinach at the end to keep it fresh and vibrant.
