Ingredients

  • 2 medium chicken breasts, sliced into halves
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup sun dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1/3 cup parmesan cheese, grated
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Heat a large skillet over medium heat and add olive oil.
  2. Season the chicken with salt, black pepper, and Italian seasoning.
  3. Place the chicken in the skillet and sear for 4 to 5 minutes on each side until golden, then remove and set aside.
  4. In the same skillet, sauté minced garlic until fragrant.
  5. Add chicken broth, heavy cream, and sun dried tomatoes, then stir and let simmer gently.
  6. Return the chicken to the skillet and cook for 8 to 10 minutes until fully cooked.
  7. Stir in fresh spinach and parmesan cheese until the spinach wilts and the sauce thickens.
  8. Serve warm with the sauce spooned over the chicken.
