- 6 boneless skinless chicken thighs
- 2 pounds Yukon Gold potatoes, peeled and cubed
- 6 tablespoons unsalted butter, divided
- 6 garlic cloves, minced
- 2 tablespoons olive oil
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon fresh rosemary, chopped
- 3/4 cup whole milk, warmed
- 1/2 cup sour cream
- 2 teaspoons salt, divided
- 1 teaspoon black pepper
- 1/2 cup chicken broth
Instructions
- Bring a large pot of salted water to a boil and heat a large skillet over medium heat.
- Season the chicken thighs with 1 teaspoon salt and black pepper.
- Add the potatoes to the boiling water and cook for about 15 minutes until fork tender.
- Heat olive oil and 2 tablespoons butter in the skillet until melted.
- Cook the chicken thighs for 5 to 6 minutes per side until golden brown and fully cooked.
- Add garlic, parsley, thyme, and rosemary to the skillet and cook for 1 minute until fragrant.
- Pour in the chicken broth and simmer for 3 to 4 minutes until the sauce slightly thickens.
- Drain the potatoes and mash them with the remaining butter, warm milk, sour cream, and remaining salt until smooth and creamy.
- Serve the garlic herb chicken over mashed potatoes and spoon the garlic herb sauce over the top before serving.
