  • 6 boneless skinless chicken thighs
  • 2 pounds Yukon Gold potatoes, peeled and cubed
  • 6 tablespoons unsalted butter, divided
  • 6 garlic cloves, minced
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon fresh rosemary, chopped
  • 3/4 cup whole milk, warmed
  • 1/2 cup sour cream
  • 2 teaspoons salt, divided
  • 1 teaspoon black pepper
  • 1/2 cup chicken broth


Instructions

  1. Bring a large pot of salted water to a boil and heat a large skillet over medium heat.
  2. Season the chicken thighs with 1 teaspoon salt and black pepper.
  3. Add the potatoes to the boiling water and cook for about 15 minutes until fork tender.
  4. Heat olive oil and 2 tablespoons butter in the skillet until melted.
  5. Cook the chicken thighs for 5 to 6 minutes per side until golden brown and fully cooked.
  6. Add garlic, parsley, thyme, and rosemary to the skillet and cook for 1 minute until fragrant.
  7. Pour in the chicken broth and simmer for 3 to 4 minutes until the sauce slightly thickens.
  8. Drain the potatoes and mash them with the remaining butter, warm milk, sour cream, and remaining salt until smooth and creamy.
  9. Serve the garlic herb chicken over mashed potatoes and spoon the garlic herb sauce over the top before serving.
