- 4 boneless skinless chicken breasts, pounded thin
- 8 slices Swiss cheese
- 8 thin slices smoked turkey
- 1 cup all purpose flour
- 2 large eggs, beaten
- 1 1/2 cups plain breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1/2 cup heavy cream
- 1 tablespoon Dijon mustard
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat oven to 375°F and lightly grease a baking dish or place a wire rack over a baking sheet.
- In a shallow bowl, combine breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and black pepper.
- Prepare a breading station with flour in one bowl, beaten eggs in another, and the breadcrumb mixture in the third.
- Place 2 slices Swiss cheese and 2 slices smoked turkey onto each flattened chicken breast. Roll tightly and secure with toothpicks.
- Coat each chicken roll in flour, dip into beaten eggs, then coat fully with the breadcrumb mixture.
- Arrange the rolls in the prepared baking dish and drizzle with olive oil.
- Bake for 30 to 35 minutes until golden brown and the chicken reaches an internal temperature of 165°F.
- While the chicken bakes, warm heavy cream and Dijon mustard in a small saucepan until smooth.
- Drizzle the sauce over the cooked chicken and garnish with chopped parsley before serving.
Notes
- Chill the chicken rolls for 15 minutes before breading for easier handling.
- Panko breadcrumbs can be used for extra crunch.
- Let the chicken rest for 5 minutes before slicing to help keep the filling inside.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
