Description

Crispy baked chicken rolls stuffed with melted Swiss cheese and smoked turkey, finished with a creamy Dijon sauce for a comforting and elegant dinner.


Ingredients

  • 4 boneless skinless chicken breasts, pounded thin
  • 8 slices Swiss cheese
  • 8 thin slices smoked turkey
  • 1 cup all purpose flour
  • 2 large eggs, beaten
  • 1 1/2 cups plain breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/2 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Preheat oven to 375°F and lightly grease a baking dish or place a wire rack over a baking sheet.
  2. In a shallow bowl, combine breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and black pepper.
  3. Prepare a breading station with flour in one bowl, beaten eggs in another, and the breadcrumb mixture in the third.
  4. Place 2 slices Swiss cheese and 2 slices smoked turkey onto each flattened chicken breast. Roll tightly and secure with toothpicks.
  5. Coat each chicken roll in flour, dip into beaten eggs, then coat fully with the breadcrumb mixture.
  6. Arrange the rolls in the prepared baking dish and drizzle with olive oil.
  7. Bake for 30 to 35 minutes until golden brown and the chicken reaches an internal temperature of 165°F.
  8. While the chicken bakes, warm heavy cream and Dijon mustard in a small saucepan until smooth.
  9. Drizzle the sauce over the cooked chicken and garnish with chopped parsley before serving.

Notes

  • Chill the chicken rolls for 15 minutes before breading for easier handling.
  • Panko breadcrumbs can be used for extra crunch.
  • Let the chicken rest for 5 minutes before slicing to help keep the filling inside.
