Ingredients

  • 3/4 cup hot coffee
  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 3/4 cup caramel sauce
  • 1/4 cup chocolate shavings


Instructions

  1. Preheat oven to 350°F and line a cupcake pan with cupcake liners.
  2. Whisk together flour, cocoa powder, granulated sugar, brown sugar, baking soda, and salt in a large bowl.
  3. In another bowl whisk eggs, milk, vegetable oil, and vanilla extract.
  4. Combine wet ingredients with dry ingredients, then stir in hot coffee until smooth.
  5. Fill cupcake liners two-thirds full with batter.
  6. Bake for 18 to 20 minutes or until a toothpick inserted comes out clean.
  7. Cool cupcakes completely on a wire rack.
  8. Beat butter until creamy, then gradually mix in powdered sugar and caramel sauce until fluffy.
  9. Pipe frosting onto cooled cupcakes.
  10. Drizzle with extra caramel sauce and top with chocolate shavings before serving.

  • Do not overmix the batter to keep the cupcakes soft and fluffy.
  • Allow cupcakes to cool fully before frosting.
  • Warm the caramel sauce slightly for easier drizzling.
