- ¼ cup olive oil
- 1 cup fresh parsley, finely chopped
- 4 cloves garlic, minced
- 2 tablespoons red wine vinegar
- 1 tablespoon fresh oregano, chopped
- ½ teaspoon red pepper flakes
- 1 teaspoon salt
- ½ teaspoon black pepper
- 8 small corn tortillas
- 1 cup diced tomatoes
- ½ cup red onion, thinly sliced
- ¼ cup fresh cilantro, chopped
- 4 lime wedges
Instructions
- Heat a cast iron skillet or grill pan over medium-high heat until very hot. Warm the corn tortillas in a dry skillet for about 30 seconds per side and set aside.
- In a mixing bowl, combine olive oil, parsley, garlic, red wine vinegar, oregano, red pepper flakes, salt, and black pepper to make the chimichurri sauce.
- Lightly oil the hot skillet and season the flank steak with additional salt and pepper if desired.
- Cook the steak for 4 to 5 minutes per side for medium-rare, depending on thickness.
- Transfer the steak to a cutting board and let it rest for 5 minutes before slicing thinly against the grain.
- Fill the warm tortillas with sliced steak and spoon chimichurri generously over the top.
- Add diced tomatoes, sliced red onion, and chopped cilantro.
- Serve immediately with lime wedges on the side.
