Description
A cozy, smoky, and creamy baked pasta made with layers of lasagna noodles, shredded chicken in barbecue sauce, ricotta, corn, Alfredo sauce, and plenty of melted cheddar cheese.

- 12 lasagna noodles
- 1 teaspoon olive oil
- 1 medium red onion, thinly sliced
- 4 cloves garlic, minced
- 3 cups cooked shredded chicken
- 3/4 cup barbecue sauce
- 15 ounces ricotta cheese
- 1 large egg, lightly beaten
- 1 cup frozen corn kernels, thawed
- 3/4 cup fresh cilantro, chopped and divided
- 16 ounces Alfredo sauce
- 3 cups shredded cheddar cheese, divided
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 400°F and lightly grease a 9×13-inch baking dish. Cook the lasagna noodles according to package directions until just tender, then drain.
- Heat the olive oil in a large skillet over medium heat. Add the red onion and cook for 4 to 5 minutes until slightly softened. Stir in the garlic and cook for 30 seconds. Add the shredded chicken and barbecue sauce, then stir until warmed through.
- In a mixing bowl, combine the ricotta cheese, beaten egg, corn, 1/4 cup of the chopped cilantro, salt, and black pepper.
- Spread 1/3 cup of Alfredo sauce over the bottom of the prepared baking dish. Arrange 4 lasagna noodles over the sauce.
- Top with one third of the chicken mixture, one third of the ricotta mixture, about 1/3 cup Alfredo sauce, and 3/4 cup shredded cheddar cheese. Repeat these layers two more times.
- Finish with the last 4 noodles on top, then spread over the remaining Alfredo sauce and the rest of the cheddar cheese.
- Cover tightly with foil and bake for 40 minutes. Remove the foil and bake for 15 to 20 minutes more, until the cheese is melted, bubbly, and lightly browned.
- Let the lasagna rest for 15 minutes. Sprinkle with the remaining cilantro, slice, and serve warm.

- Let the lasagna rest before slicing so the layers stay neat.
- Rotisserie chicken works especially well for quick prep.
- Use a smoky barbecue sauce for deeper flavor, or a sweeter one for a milder finish.
- Leftovers keep well in the refrigerator for up to 4 days.
