Description

A cozy, smoky, and creamy baked pasta made with layers of lasagna noodles, shredded chicken in barbecue sauce, ricotta, corn, Alfredo sauce, and plenty of melted cheddar cheese.


Ingredients

  • 12 lasagna noodles
  • 1 teaspoon olive oil
  • 1 medium red onion, thinly sliced
  • 4 cloves garlic, minced
  • 3 cups cooked shredded chicken
  • 3/4 cup barbecue sauce
  • 15 ounces ricotta cheese
  • 1 large egg, lightly beaten
  • 1 cup frozen corn kernels, thawed
  • 3/4 cup fresh cilantro, chopped and divided
  • 16 ounces Alfredo sauce
  • 3 cups shredded cheddar cheese, divided
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat the oven to 400°F and lightly grease a 9×13-inch baking dish. Cook the lasagna noodles according to package directions until just tender, then drain.
  2. Heat the olive oil in a large skillet over medium heat. Add the red onion and cook for 4 to 5 minutes until slightly softened. Stir in the garlic and cook for 30 seconds. Add the shredded chicken and barbecue sauce, then stir until warmed through.
  3. In a mixing bowl, combine the ricotta cheese, beaten egg, corn, 1/4 cup of the chopped cilantro, salt, and black pepper.
  4. Spread 1/3 cup of Alfredo sauce over the bottom of the prepared baking dish. Arrange 4 lasagna noodles over the sauce.
  5. Top with one third of the chicken mixture, one third of the ricotta mixture, about 1/3 cup Alfredo sauce, and 3/4 cup shredded cheddar cheese. Repeat these layers two more times.
  6. Finish with the last 4 noodles on top, then spread over the remaining Alfredo sauce and the rest of the cheddar cheese.
  7. Cover tightly with foil and bake for 40 minutes. Remove the foil and bake for 15 to 20 minutes more, until the cheese is melted, bubbly, and lightly browned.
  8. Let the lasagna rest for 15 minutes. Sprinkle with the remaining cilantro, slice, and serve warm.

  • Let the lasagna rest before slicing so the layers stay neat.
  • Rotisserie chicken works especially well for quick prep.
  • Use a smoky barbecue sauce for deeper flavor, or a sweeter one for a milder finish.
