- 3 cups shredded smoked beef brisket
- 2 cups shredded cheddar cheese
- 1 1/2 cups shredded Monterey Jack cheese
- 3/4 cup barbecue sauce
- 1 fresh jalapeño, sliced thinly
- 2 Roma tomatoes, diced
- 3 green onions, chopped
- 1/2 cup sour cream
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
Instructions
- Preheat oven to 400°F and line a large baking sheet with parchment paper.
- In a bowl, toss shredded brisket with olive oil, smoked paprika, garlic powder, and 1/4 cup barbecue sauce.
- Spread half the tortilla chips evenly on the baking sheet.
- Top with half the brisket mixture, half the cheddar cheese, and half the Monterey Jack cheese.
- Repeat with remaining chips, brisket, and cheeses.
- Bake for 10 to 12 minutes until cheese is melted and bubbling.
- Remove from oven and top with diced tomatoes, sliced jalapeños, chopped green onions, sour cream, and remaining barbecue sauce.
- Serve immediately while hot and crispy.
