Description

Soft and chewy ube marble cookies with beautiful purple swirls, buttery vanilla flavor, and a tender bakery-style texture that comes together in under 30 minutes.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon ube extract
  • 1 tablespoon whole milk


Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. Whisk together flour, baking powder, and salt in a bowl.
  3. In another bowl, cream butter, granulated sugar, and brown sugar until fluffy.
  4. Mix in egg and vanilla extract.
  5. Divide dough into two equal portions.
  6. Mix ube extract and milk into one portion until evenly purple.
  7. Scoop portions of vanilla and ube dough together and lightly swirl to create a marbled effect.
  8. Place dough balls onto prepared baking sheet.
  9. Bake for 10 to 12 minutes until edges are lightly golden.
  10. Cool on baking sheet for 5 minutes before transferring to a wire rack.

Notes

  • Do not overmix the dough to keep the cookies soft.
  • For stronger purple color, add extra ube extract.
  • Slightly underbake for chewy centers.
  • Store in an airtight container for up to 5 days.
