- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 tablespoon ube extract
- 1 tablespoon whole milk
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Whisk together flour, baking powder, and salt in a bowl.
- In another bowl, cream butter, granulated sugar, and brown sugar until fluffy.
- Mix in egg and vanilla extract.
- Divide dough into two equal portions.
- Mix ube extract and milk into one portion until evenly purple.
- Scoop portions of vanilla and ube dough together and lightly swirl to create a marbled effect.
- Place dough balls onto prepared baking sheet.
- Bake for 10 to 12 minutes until edges are lightly golden.
- Cool on baking sheet for 5 minutes before transferring to a wire rack.
Notes
- Do not overmix the dough to keep the cookies soft.
- For stronger purple color, add extra ube extract.
- Slightly underbake for chewy centers.
- Store in an airtight container for up to 5 days.
