- 8 oz spaghetti or pasta of choice
- 1 1/2 cups plain Greek yogurt
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese (optional)
- Salt and pepper to taste
- 1/2 teaspoon dried mint or oregano
- Fresh parsley or dill for garnish (optional)
Instructions
- Cook pasta according to package instructions until al dente. Reserve 1/4 cup of the pasta water and drain the rest.
- In a pan, heat olive oil over medium heat and sauté the garlic until fragrant, about 1 minute.
- In a large bowl, whisk together Greek yogurt, Parmesan (if using), salt, pepper, and dried mint or oregano.
- Gradually mix in the warm pasta water to loosen the yogurt sauce.
- Add the cooked pasta to the bowl and gently toss until evenly coated in the sauce.
- Top with fresh herbs and serve warm or at room temperature.
Notes
- Use full-fat Greek yogurt for the creamiest result.
- Add grilled chicken or sautéed mushrooms for extra protein.
- Serve immediately to avoid curdling the yogurt with too much heat.
