- 6 bone-in, skin-on chicken thighs
- 2–3 sprigs fresh rosemary
- 2 large oranges, juiced (plus slices for garnish)
- 1 lemon, juiced
- 3 garlic cloves, minced
- 3 tablespoons honey
- 2 tablespoons olive oil
- 1 tablespoon Dijon mustard
- 1 ½ teaspoons salt
- ½ teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, whisk together the orange juice, lemon juice, honey, olive oil, Dijon mustard, garlic, salt, and pepper.
- Lightly oil a baking dish and place the chicken thighs skin-side up.
- Add rosemary sprigs and orange slices around the chicken.
- Pour the marinade over the chicken and let sit for 30 minutes if time allows.
- Bake for 35–40 minutes, basting once or twice with pan juices.
- Broil for 2–3 minutes for crispier skin if desired.
- Garnish with fresh citrus and rosemary. Serve warm.
