Description

Walking Taco Casserole is a fun, family-friendly dinner that layers all your favorite taco flavors into one bubbly, cheesy bake. With seasoned beef, black beans, tomatoes, crunchy Fritos, and plenty of melty cheese, it’s a quick and easy comfort food recipe that’s perfect for busy weeknights or game day gatherings.

Ingredients

Scale
  • 1 pound ground beef
  • 1 small onion, chopped finely
  • 1 package taco seasoning
  • ½ cup water
  • 1 can black beans (15 ounces), drained and rinsed
  • 1 can diced tomatoes with green chiles (10 ounces)
  • ½ cup sour cream
  • 1 bag Fritos corn chips (9.25 ounces)
  • 2 cups Mexican-style shredded cheese

Toppings:

  • Green onions, sliced
  • Sour cream
  • Guacamole
  • Salsa
  • Jalapeños

Instructions

  1. Preheat oven: Set your oven to 350°F (175°C).
  2. Cook the beef: In a large skillet over medium heat, cook the ground beef and onion until the beef is browned and the onion is softened. Drain excess grease.
  3. Season: Stir in taco seasoning and water. Simmer for 2–3 minutes until thickened.
  4. Add beans and tomatoes: Mix in black beans and diced tomatoes with green chiles. Cook for 2–3 minutes, then remove from heat.
  5. Assemble casserole: In a greased 9×13-inch baking dish, layer half of the Fritos on the bottom. Spread the beef mixture evenly over the chips. Dollop sour cream across the top, then sprinkle with shredded cheese.
  6. Bake: Place in the oven and bake for 15–20 minutes, until cheese is melted and bubbly.
  7. Top and serve: Remove from the oven, sprinkle with the remaining Fritos, and add desired toppings like green onions, salsa, guacamole, jalapeños, or extra sour cream.

Notes

  • Swap ground beef for ground turkey or chicken for a lighter version.
  • Use flavored Fritos (like chili cheese) for a fun twist.
  • Best served immediately so the chips stay crunchy.
