- 1 package taco seasoning
- ½ cup water
- 1 can black beans (15 ounces), drained and rinsed
- 1 can diced tomatoes with green chiles (10 ounces)
- ½ cup sour cream
- 1 bag Fritos corn chips (9.25 ounces)
- 2 cups Mexican-style shredded cheese

Instructions
- Preheat oven: Set your oven to 350°F (175°C).
- Cook the beef: In a large skillet over medium heat, cook the ground beef and onion until the beef is browned and the onion is softened. Drain excess grease.
- Season: Stir in taco seasoning and water. Simmer for 2–3 minutes until thickened.
- Add beans and tomatoes: Mix in black beans and diced tomatoes with green chiles. Cook for 2–3 minutes, then remove from heat.
- Assemble casserole: In a greased 9×13-inch baking dish, layer half of the Fritos on the bottom. Spread the beef mixture evenly over the chips. Dollop sour cream across the top, then sprinkle with shredded cheese.
- Bake: Place in the oven and bake for 15–20 minutes, until cheese is melted and bubbly.
- Top and serve: Remove from the oven, sprinkle with the remaining Fritos, and add desired toppings like green onions, salsa, guacamole, jalapeños, or extra sour cream.
