These Vegan Banana Bread Donuts are soft, moist, and full of warm banana flavor with a hint of cinnamon. They’re topped with a sweet vanilla icing, making them the perfect plant-based treat for breakfast or dessert.

- 1 ripe banana, mashed
- 1 flax egg (1 tbsp flax meal + 3 tbsp water)
- 1 tsp vanilla
- 1 1/2 tbsp vegan butter, melted
- 1/4 cup coconut sugar
- 1/2 cup all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- Pinch of salt
- Icing:
- 2 tbsp vegan butter, melted
- 1/2 cup powdered sugar
- 1/2 tsp vanilla extract
- Pinch of salt
- Splash of non-dairy milk
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a donut pan.
- Prepare the flax egg by mixing flax meal and water in a small bowl. Let sit for 5 minutes to thicken.
- In a mixing bowl, mash the banana until smooth. Stir in the flax egg, vanilla, melted vegan butter, and coconut sugar.
- Add the flour, baking powder, cinnamon, and salt. Mix until just combined, being careful not to overmix.
- Spoon the batter into the donut pan, filling each cavity about 3/4 full.
- Bake for 12–15 minutes, or until a toothpick inserted comes out clean. Let donuts cool in the pan for 5 minutes before transferring to a wire rack.
- For the icing, whisk together the melted vegan butter, powdered sugar, vanilla, salt, and a splash of non-dairy milk until smooth and pourable.
- Dip cooled donuts into the icing, allow it to set, and enjoy.
Notes
- You can substitute coconut sugar with brown sugar if preferred.
- Top with crushed nuts, shredded coconut, or chocolate drizzle for extra flavor.
- These donuts are best enjoyed fresh but can be stored in an airtight container for up to 3 days.
