Description

These Vegan Banana Bread Donuts are soft, moist, and full of warm banana flavor with a hint of cinnamon. They’re topped with a sweet vanilla icing, making them the perfect plant-based treat for breakfast or dessert.


Ingredients

  • 1 ripe banana, mashed
  • 1 flax egg (1 tbsp flax meal + 3 tbsp water)
  • 1 tsp vanilla
  • 1 1/2 tbsp vegan butter, melted
  • 1/4 cup coconut sugar
  • 1/2 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • Pinch of salt
  • Icing:
  • 2 tbsp vegan butter, melted
  • 1/2 cup powdered sugar
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • Splash of non-dairy milk


Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a donut pan.
  2. Prepare the flax egg by mixing flax meal and water in a small bowl. Let sit for 5 minutes to thicken.
  3. In a mixing bowl, mash the banana until smooth. Stir in the flax egg, vanilla, melted vegan butter, and coconut sugar.
  4. Add the flour, baking powder, cinnamon, and salt. Mix until just combined, being careful not to overmix.
  5. Spoon the batter into the donut pan, filling each cavity about 3/4 full.
  6. Bake for 12–15 minutes, or until a toothpick inserted comes out clean. Let donuts cool in the pan for 5 minutes before transferring to a wire rack.
  7. For the icing, whisk together the melted vegan butter, powdered sugar, vanilla, salt, and a splash of non-dairy milk until smooth and pourable.
  8. Dip cooled donuts into the icing, allow it to set, and enjoy.

Notes

  • You can substitute coconut sugar with brown sugar if preferred.
  • Top with crushed nuts, shredded coconut, or chocolate drizzle for extra flavor.
