Ingredients

  • 2 medium ripe bananas (for batter)
  • 1/2 cup brown sugar
  • 6 tablespoons butter, divided
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup Greek yogurt or sour cream


Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×5 loaf pan with parchment. Grease sides.
  2. In a bowl, mash 2 ripe bananas. Whisk in eggs, vanilla, granulated sugar, and melted butter. Stir in Greek yogurt.
  3. In a separate bowl, combine flour, baking soda, and salt. Fold dry ingredients into wet gently.
  4. Melt 4 tablespoons butter with brown sugar and pour into the loaf pan. Layer sliced bananas cut-side down over caramel.
  5. Pour batter over banana layer and smooth the top.
  6. Bake for 50–60 minutes, or until a toothpick comes out clean.
  7. Cool for 10–15 minutes, then invert onto a serving plate and peel off parchment.
  8. Slice and serve warm or at room temperature.
