Description

  • 12 ounces short pasta such as penne or rotini
  • 1 pound lean ground beef
  • 2 cups plain full fat yogurt
  • 3 garlic cloves, minced
  • 1 medium yellow onion, finely chopped
  • 4 tablespoons unsalted butter
  • 1 teaspoon red pepper flakes
  • 1 teaspoon sweet paprika
  • 1 teaspoon salt, divided
  • 1 teaspoon black pepper, divided
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Bring a large pot of generously salted water to a boil over medium high heat.
  2. In a mixing bowl, combine the plain full fat yogurt, minced garlic, and a pinch of the salt. Stir until smooth and set aside at room temperature.
  3. Heat a large skillet over medium heat. Add the ground beef and chopped yellow onion. Season with half of the salt and half of the black pepper. Cook until the beef is fully browned and slightly caramelized, about 8 to 10 minutes.
  4. Cook the pasta according to package instructions until al dente. Drain well.
  5. In a small saucepan, melt the unsalted butter over low heat. Remove from heat and stir in the red pepper flakes and sweet paprika. Let the spices infuse into the warm butter.
  6. Toss the drained pasta with the garlic yogurt sauce until evenly coated.
  7. Spoon the cooked beef mixture over the yogurt coated pasta.
  8. Drizzle the spiced butter evenly over the top and sprinkle with chopped fresh parsley before serving.

Notes

  • Let the yogurt sit at room temperature for about 20 minutes before mixing to ensure a smoother sauce.
  • Do not overcook the pasta, as it will continue to soften slightly when combined with the sauce.
