Instructions
- Preheat your oven to 400 degrees Fahrenheit.
- In a large mixing bowl, gently combine ground turkey, Italian breadcrumbs, grated Parmesan cheese, egg, minced garlic, dried oregano, salt, and black pepper until just mixed.
- Shape the mixture into evenly sized meatballs.
- Heat olive oil in a skillet over medium heat and lightly sear the meatballs on all sides for about 2 to 3 minutes.
- Transfer the meatballs to a baking sheet and bake for 12 to 15 minutes, or until they reach an internal temperature of 165 degrees Fahrenheit.
- Warm the marinara sauce in a saucepan and coat the cooked meatballs in the sauce.
- Place the meatballs into the sub sandwich rolls and spoon extra marinara sauce over the top.
- Sprinkle shredded mozzarella cheese evenly over each sub.
- Return the assembled subs to the oven and bake for 5 to 7 minutes, until the cheese is melted and bubbly.
- Remove from the oven, sprinkle with fresh chopped parsley, and serve warm.
