Description

A vibrant sweet and savory bowl featuring tender chicken, juicy pineapple, and fluffy rice coated in a glossy tropical sauce. This comforting meal balances savory depth with bright fruit sweetness and comes together quickly for a satisfying dinner.

Ingredients

Scale
  • 1 pound boneless skinless chicken pieces
  • 1 ½ cups pineapple chunks
  • 1 cup uncooked white rice
  • 1 medium red bell pepper, diced
  • 2 green onions, sliced
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons olive oil
  • ¾ cup chicken broth
  • 1 tablespoon cornstarch

Instructions

  1. Cook the white rice according to package instructions until fluffy and tender.
  2. In a bowl whisk together soy sauce, honey, chicken broth, grated ginger, minced garlic, and cornstarch until smooth.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add the chicken pieces and cook until lightly golden and cooked through.
  5. Stir in the diced red bell pepper and pineapple chunks and cook for 2 to 3 minutes.
  6. Pour the prepared sauce mixture into the skillet and stir gently.
  7. Let the sauce simmer for several minutes until it thickens and coats the chicken and pineapple.
  8. Stir in the sliced green onions.
  9. Spoon the pineapple chicken mixture over cooked rice and serve warm.

Notes

  • Fresh pineapple gives the brightest flavor but canned pineapple works well when drained.
  • For a thicker sauce mix an extra teaspoon of cornstarch with water and stir it in while simmering.
  • You can add vegetables like broccoli or snap peas for extra texture.
  • A squeeze of fresh lime before serving brightens the flavors.
