- 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 tablespoon vegetable oil
- 1/2 cup creamy peanut butter
- 1/4 cup soy sauce
- 1 tablespoon rice vinegar or lime juice
- 2 tablespoons brown sugar
- 2 teaspoons grated fresh ginger
- 2 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup chicken broth or water
- 1 tablespoon sesame oil (optional)
- 1/4 cup chopped roasted peanuts (for garnish)
- 2 tablespoons chopped fresh cilantro (for garnish)
- Steamed rice or noodles for serving
Instructions
- Heat vegetable oil in a large skillet over medium heat. Add chicken and cook until browned and cooked through, about 6–8 minutes. Remove and set aside.
- In the same skillet, add garlic and ginger. Sauté for 1 minute until fragrant.
- Add peanut butter, soy sauce, rice vinegar, brown sugar, red pepper flakes (if using), and chicken broth. Stir until smooth and slightly thickened.
- Return cooked chicken to the skillet and toss to coat in the peanut sauce. Simmer for 2–3 minutes until heated through. Stir in sesame oil if using.
- Serve over steamed rice or noodles. Garnish with chopped peanuts and cilantro.
Notes
- For extra vegetables, add bell peppers, snap peas, or shredded carrots to the skillet before simmering.
- Adjust spice level by increasing or omitting red pepper flakes.
- Use crunchy peanut butter for extra texture.
