Description

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 tablespoon vegetable oil
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar or lime juice
  • 2 tablespoons brown sugar
  • 2 teaspoons grated fresh ginger
  • 2 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup chicken broth or water
  • 1 tablespoon sesame oil (optional)
  • 1/4 cup chopped roasted peanuts (for garnish)
  • 2 tablespoons chopped fresh cilantro (for garnish)
  • Steamed rice or noodles for serving

Instructions

  1. Heat vegetable oil in a large skillet over medium heat. Add chicken and cook until browned and cooked through, about 6–8 minutes. Remove and set aside.
  2. In the same skillet, add garlic and ginger. Sauté for 1 minute until fragrant.
  3. Add peanut butter, soy sauce, rice vinegar, brown sugar, red pepper flakes (if using), and chicken broth. Stir until smooth and slightly thickened.
  4. Return cooked chicken to the skillet and toss to coat in the peanut sauce. Simmer for 2–3 minutes until heated through. Stir in sesame oil if using.
  5. Serve over steamed rice or noodles. Garnish with chopped peanuts and cilantro.

Notes

  • For extra vegetables, add bell peppers, snap peas, or shredded carrots to the skillet before simmering.
  • Adjust spice level by increasing or omitting red pepper flakes.
