Ingredients

  • 2 cups cooked jasmine rice (preferably cold, day-old)
  • 1 lb boneless, skinless chicken thighs or breasts, thinly sliced
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 2 Thai chilies or 1 red chili, finely chopped (optional for heat)
  • 1 small onion, sliced
  • 1/2 cup sliced bell pepper (red or green)
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp fish sauce
  • 1 tsp brown sugar
  • 1 egg (optional)
  • 1 cup fresh Thai basil leaves
  • Green onions or lime wedges, for garnish

Instructions

  1. Heat vegetable oil in a large wok or skillet over medium-high heat. Add garlic and chilies, stir-frying for 30 seconds until fragrant.
  2. Add sliced chicken and cook until browned and cooked through, about 4–5 minutes.
  3. Push the chicken to one side of the pan. Crack in the egg (if using) and scramble until cooked, then mix with the chicken.
  4. Add sliced onion and bell pepper, stir-frying for 2–3 minutes until slightly softened.
  5. Add the rice, breaking up any clumps. Stir well to combine everything.
  6. In a small bowl, mix soy sauce, oyster sauce, fish sauce, and brown sugar. Pour over the rice and stir-fry until evenly coated and heated through.
  7. Turn off the heat and stir in Thai basil leaves until just wilted.
  8. Serve hot, garnished with green onions or lime wedges.

Notes

  • Use cold, leftover rice for best texture.
  • Thai basil has a distinct flavor—sweet basil can be substituted in a pinch.
