- 1 large butternut squash (about 2.5 pounds), peeled and thinly sliced
- 1 cup grated parmesan cheese
- 6 tablespoons unsalted butter, melted
- 2 tablespoons fresh sage leaves, chopped
- 2 garlic cloves, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 400°F (200°C) and lightly grease a 9×13 inch baking dish.
- In a large bowl, toss the sliced squash with melted butter, garlic, salt, pepper, half of the parmesan, and chopped sage.
- Line the baking dish with a layer of squash slices, standing upright and slightly overlapping.
- Pour any remaining butter mixture over the top and sprinkle with remaining parmesan.
- Bake uncovered for 45-50 minutes until the edges are crispy and golden and the squash is tender.
- Let the dish rest for 5-10 minutes before serving.
- Pull sections apart with a fork or spoon and serve warm.

- Use a mandoline slicer for uniform thin slices.
- Real parmesan cheese gives better flavor and crispiness than pre-shredded.
- Let the dish cool slightly before serving to set the layers.
