This Taco Caesar Salad is a bold, flavorful twist on two classics! Crisp romaine, sautéed taco-seasoned beef, crunchy Doritos, and a mix of parmesan and nacho cheeses come together with creamy Caesar dressing for a salad that’s hearty enough to be a full meal.

- 1 lb lean ground beef
- 1 tablespoon chopped garlic
- 1 oz taco seasoning
- ⅓ cup water
- 2 romaine hearts, chopped (or 1 large head romaine)
- ½ medium red onion, sliced
- 1 medium green bell pepper, sliced
- 1 medium red bell pepper, sliced
- ⅓ cup shredded parmesan cheese
- 1 cup shredded nacho cheese blend
- ½ cup Caesar dressing
- 4 oz Doritos, crumbled
- Optional: lemon slices for garnish
Instructions
- In a skillet over medium heat, cook the ground beef until browned, about 5–6 minutes.
- Add garlic and cook for 1 more minute until fragrant.
- Stir in taco seasoning and water, simmering until thickened. Remove from heat and let cool slightly.
- In a large salad bowl, add chopped romaine, red onion, green pepper, and red pepper.
- Toss with Caesar dressing until evenly coated.
- Add the seasoned beef, parmesan, nacho cheese, and crumbled Doritos on top.
- Garnish with lemon slices if desired and serve immediately.
Notes
- Swap Doritos for tortilla strips if you prefer a lighter crunch.
- Grilled chicken or turkey can be used instead of ground beef.
- This salad is best served fresh before the Doritos lose their crunch.
