- 1 lb ground beef
- 1 (1oz) packet taco seasoning
- 12 6” soft tortilla shells
- 1 cup refried beans
- 8 oz Colby Jack cheese, shredded
- 1 cup taco sauce
- 1 cup chopped tomatoes
- 1 cup white onion, chopped
- 2 jalapenos, sliced
- 2 tablespoons fresh cilantro, chopped
- 1 lime, cut into wedges
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Add taco seasoning and a small amount of water (as directed on the packet). Stir and cook until fully combined. Remove from heat.
- Spread refried beans evenly over 6 tortillas, then layer with cooked beef, shredded cheese, and a second tortilla on top to form a sandwich.
- Place the assembled tortillas on a baking sheet and bake for 10-12 minutes, or until the cheese melts and the tortillas are slightly crispy.
- Remove from oven and spread taco sauce over the top layer.
- Top with chopped tomatoes, white onion, sliced jalapenos, and chopped cilantro.
- Cut into slices and serve with lime wedges.
