Description

This copycat Taco Bell Mexican Pizza features layers of crispy tortillas, seasoned ground beef, refried beans, melted cheese, and fresh toppings. It’s a fun, flavorful meal that’s perfect for family dinners or casual gatherings.


Ingredients

  • 1 lb ground beef
  • 1 (1oz) packet taco seasoning
  • 12 6” soft tortilla shells
  • 1 cup refried beans
  • 8 oz Colby Jack cheese, shredded
  • 1 cup taco sauce
  • 1 cup chopped tomatoes
  • 1 cup white onion, chopped
  • 2 jalapenos, sliced
  • 2 tablespoons fresh cilantro, chopped
  • 1 lime, cut into wedges


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  3. Add taco seasoning and a small amount of water (as directed on the packet). Stir and cook until fully combined. Remove from heat.
  4. Spread refried beans evenly over 6 tortillas, then layer with cooked beef, shredded cheese, and a second tortilla on top to form a sandwich.
  5. Place the assembled tortillas on a baking sheet and bake for 10-12 minutes, or until the cheese melts and the tortillas are slightly crispy.
  6. Remove from oven and spread taco sauce over the top layer.
  7. Top with chopped tomatoes, white onion, sliced jalapenos, and chopped cilantro.
  8. Cut into slices and serve with lime wedges.

  • You can crisp the bottom tortilla in a skillet before assembling for extra crunch.
