Description

Ingredients

  • 1/4 cup brown sugar

  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 9-inch unbaked pie crust


Instructions

  1. Preheat your oven to 350°F (175°C) and place a rack in the center.
  2. In a large bowl, mash the roasted sweet potatoes until smooth. Add granulated sugar, brown sugar, eggs, evaporated milk, melted butter, vanilla, cinnamon, nutmeg, and salt. Mix until creamy and well combined.
  3. Place the pie crust into a 9-inch pie pan and press into the edges. Crimp or trim the crust as desired.
  4. Pour the filling into the prepared crust and smooth the top with a spatula.
  5. Bake for 50 to 60 minutes or until the center is just set and a knife inserted comes out clean.
