- 2 large eggs

- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 9-inch unbaked pie crust
Instructions
- Preheat your oven to 350°F (175°C) and place a rack in the center.
- In a large bowl, mash the roasted sweet potatoes until smooth. Add granulated sugar, brown sugar, eggs, evaporated milk, melted butter, vanilla, cinnamon, nutmeg, and salt. Mix until creamy and well combined.
- Place the pie crust into a 9-inch pie pan and press into the edges. Crimp or trim the crust as desired.
- Pour the filling into the prepared crust and smooth the top with a spatula.
- Bake for 50 to 60 minutes or until the center is just set and a knife inserted comes out clean.
- Cool completely on a wire rack before slicing and serving.
