These Strawberry Shortcake Truffles are bite-sized pumpkin-spiced delights coated in sweet confectioners’ sugar and topped with creamy vanilla cream cheese frosting. Perfect for holiday treats, dessert tables, or anytime you crave a sweet, festive snack.

Truffles:
- 3/4 cup (94g) all-purpose flour (spooned & leveled)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon pumpkin pie spice
- 1/4 teaspoon salt
- 3 large eggs, at room temperature
- 2/3 cup (150g) canned pumpkin puree
- 1/2 cup (100g) packed light or dark brown sugar
- 1/2 cup (100g) granulated sugar
- 1 teaspoon pure vanilla extract
For rolling:
- 3/4 cup (90g) confectioners’ sugar
Cream Cheese Frosting:
- 6 ounces (170g) full-fat cream cheese, softened to room temperature
- 1/4 cup (56g) unsalted butter, softened to room temperature
- 1 1/2 cups (180g) confectioners’ sugar
- 1 teaspoon pure vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, pumpkin pie spice, and salt.
- In a large bowl, beat eggs, pumpkin puree, brown sugar, granulated sugar, and vanilla until smooth.
- Gradually fold the dry ingredients into the wet ingredients until fully combined.
- Drop batter by small spoonfuls onto the prepared baking sheet, forming small rounds. Bake for 12–15 minutes, or until a toothpick inserted comes out clean.
- Allow to cool completely. Roll each cooled truffle in confectioners’ sugar to coat evenly.
- For the frosting, beat together cream cheese and butter until smooth. Gradually add confectioners’ sugar and vanilla, mixing until creamy.
- Top each truffle with a small dollop of cream cheese frosting before serving.

- Store truffles in an airtight container in the refrigerator for up to 5 days.
- For a fun variation, drizzle melted white chocolate over the frosted truffles.
- Ensure truffles are completely cooled before rolling in confectioners’ sugar to prevent sticking.
