Strawberry Pudding is a creamy, fruity dessert made with fresh strawberries, milk, and a hint of vanilla—perfect for a light, refreshing treat.

- 2 cups fresh strawberries, hulled and chopped
- 1/2 cup sugar
- 2 tbsp cornstarch
- 1/8 tsp salt
- 2 cups milk
- 1 tsp vanilla extract
- Whipped cream and extra strawberries for topping (optional)
Instructions
- In a blender, puree the strawberries until smooth. Set aside.
- In a medium saucepan, whisk together sugar, cornstarch, and salt.
- Gradually add milk while whisking to prevent lumps.
- Cook over medium heat, stirring constantly until the mixture begins to thicken and bubble (about 6–8 minutes).
- Reduce heat to low, stir in the strawberry puree, and continue cooking for another 2–3 minutes.
- Remove from heat and stir in vanilla extract.
- Pour the pudding into serving cups and let cool slightly before refrigerating for at least 2 hours.
- Top with whipped cream and fresh strawberries before serving, if desired.
Notes
- For a smoother texture, strain the strawberry puree before adding.
- Can be made ahead and stored in the fridge for up to 3 days.
- Try using almond or oat milk for a dairy-free version.
