Instructions
- Clean and chill: Rinse strawberries, chill sparkling water, and set out a clean blender, fine mesh strainer, juicer, and large pitcher.
- Blend strawberries: Add sliced strawberries to the blender and puree until smooth.
- Juice lemons: Juice lemons to yield 1 cup fresh lemon juice, then whisk with sugar or honey in a bowl until fully dissolved.
- Combine base: Pour the strawberry puree and sweetened lemon juice into a large pitcher, add 1 cup cold water, and stir well. Strain through a fine mesh strainer if you prefer a smoother drink.
- Add bubbles: Right before serving, gently pour in 3 cups chilled sparkling water and stir slowly to preserve the fizz.
- Ice and garnish: Fill glasses with ice, then garnish with mint leaves and lemon wheels.
- Serve: Pour the sparkler into prepared glasses and enjoy immediately while bubbly.
