Ingredients

  • 1 large avocado, diced
  • 2 cups baby spinach, packed
  • 1 cup arugula
  • 1 large pink grapefruit, segmented
  • 1 medium orange, segmented
  • 1/2 cup cucumber, thinly sliced
  • 1/4 cup red onion, thinly sliced
  • 2 tbsp fresh mint leaves, chopped
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp maple syrup
  • 1 tsp Dijon mustard
  • 1/2 tsp sea salt
  • Cracked black pepper to taste


Instructions

  1. Chill your salad bowl in the fridge for extra crispness.
  2. In a large bowl, combine spinach, arugula, cucumber, red onion, citrus segments, and chopped mint.
  3. In a small bowl or jar, whisk or shake together olive oil, lemon juice, maple syrup, Dijon mustard, sea salt, and black pepper until emulsified.
  4. Gently add avocado cubes to the greens and citrus. Drizzle the dressing over and toss lightly.
  5. Let the salad sit for 5 minutes to meld flavors.
  6. Top with extra mint leaves, cracked pepper, and optional seeds for crunch.
