- 12 large raw shrimp, peeled and deveined
- 2 packs (about 6 oz) ramen noodles
- 4 cups chicken broth
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 small heads bok choy, halved
- 3 green onions, sliced
- 1 red chili, sliced
- 2 soft-boiled eggs, halved
Instructions
- Heat a medium saucepan over medium heat and a large pot with water until boiling.
- In the saucepan, sauté garlic and ginger in sesame oil until fragrant. Add chicken broth and soy sauce. Simmer for 5–10 minutes.
- Add shrimp and bok choy to the broth. Simmer for 2–3 minutes until shrimp are cooked and bok choy is tender. Remove from heat.
- Cook ramen noodles in the large pot according to package instructions. Drain and rinse briefly under cold water.
- Divide noodles between serving bowls. Ladle hot broth, shrimp, and bok choy over noodles.
- Top each bowl with soft-boiled eggs, green onions, and sliced red chili. Serve hot.
Notes
- Use low-sodium broth to better control the salt level.
- Prepare soft-boiled eggs ahead and marinate in soy sauce for added flavor.
- Add chili oil or sesame seeds for extra flair.
