Description

These sheet pan pumpkin pie bars are a cozy, crowd-pleasing twist on classic pumpkin pie, made with a buttery crust and creamy, spiced pumpkin filling. Perfect for fall gatherings or an easy dessert anytime.

Ingredients

Scale
  • 1 and 3/4 cups all-purpose flour
  • 3/4 cup unsalted butter, cold and cubed
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 can (15 ounces) canned pumpkin puree
  • 1 cup brown sugar
  • 3 large eggs
  • 1 cup heavy cream
  • 2 teaspoons vanilla extract
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch sheet pan with parchment paper and lightly grease it.
  2. In a mixing bowl, combine flour, granulated sugar, and salt. Cut in cold butter using a pastry cutter or your fingers until crumbly. Press the mixture evenly into the bottom of the prepared pan to form the crust.
  3. Bake the crust for 15 minutes until lightly golden. Let it cool slightly while preparing the filling.
  4. In another bowl, whisk together pumpkin puree, brown sugar, eggs, heavy cream, vanilla extract, cinnamon, ginger, and nutmeg until smooth and well combined.
  5. Pour the filling over the baked crust and spread evenly.
  6. Bake for 35 to 40 minutes or until the center is set but still slightly jiggly.
  7. Allow the bars to cool completely in the pan. Then chill in the refrigerator for at least 2 hours before slicing.
  8. Slice into squares and serve with whipped cream or a dusting of cinnamon if desired.

Notes

  • Use parchment paper for easy removal and clean slicing.
  • Make sure to use canned pumpkin puree, not pumpkin pie filling.
  • Don’t overbake—the center should have a slight jiggle when done.
  • Bars slice best when thoroughly chilled.
