- 2 boneless, skinless chicken breasts
- 1 tablespoon Cajun seasoning
- 1 tablespoon olive oil
- 1/2 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon butter
- 1/2 cup chicken broth
- 1/2 cup milk
- 12 oz linguine pasta
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
- 1/2 teaspoon crushed red pepper flakes (optional)
Instructions
- Cook the linguine according to the package instructions. Drain and set aside, reserving some pasta water.
- Season both sides of the chicken breasts with Cajun seasoning, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 6-7 minutes on each side until golden and cooked through. Remove the chicken from the skillet and set aside to rest. Slice the chicken thinly once it’s slightly cooled.
- In the same skillet, add butter and garlic. Sauté for about 1 minute until the garlic is fragrant.
- Pour in the chicken broth and milk, scraping up any browned bits from the bottom of the pan. Bring to a simmer.
- Lower the heat and stir in the heavy cream and grated Parmesan cheese. Cook until the sauce thickens slightly, about 3-4 minutes. Season with salt, pepper, and red pepper flakes (if using).
- Add the cooked linguine to the skillet, tossing to coat in the creamy sauce. If the sauce is too thick, add a little reserved pasta water to reach the desired consistency.
- Top the creamy pasta with sliced Cajun chicken. Garnish with fresh parsley and extra Parmesan if desired. Serve immediately.
Notes
- For extra heat, add more Cajun seasoning or a pinch of cayenne pepper to the sauce.
- Try substituting the heavy cream with half-and-half or a lighter cream for a less rich version.
- If you prefer a smoky flavor, consider using smoked paprika in the seasoning mix.
