Description

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil
  • 1/2 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon butter
  • 1/2 cup chicken broth
  • 1/2 cup milk
  • 12 oz linguine pasta
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • 1/2 teaspoon crushed red pepper flakes (optional)

Instructions

  1. Cook the linguine according to the package instructions. Drain and set aside, reserving some pasta water.
  2. Season both sides of the chicken breasts with Cajun seasoning, salt, and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 6-7 minutes on each side until golden and cooked through. Remove the chicken from the skillet and set aside to rest. Slice the chicken thinly once it’s slightly cooled.
  4. In the same skillet, add butter and garlic. Sauté for about 1 minute until the garlic is fragrant.
  5. Pour in the chicken broth and milk, scraping up any browned bits from the bottom of the pan. Bring to a simmer.
  6. Lower the heat and stir in the heavy cream and grated Parmesan cheese. Cook until the sauce thickens slightly, about 3-4 minutes. Season with salt, pepper, and red pepper flakes (if using).
  7. Add the cooked linguine to the skillet, tossing to coat in the creamy sauce. If the sauce is too thick, add a little reserved pasta water to reach the desired consistency.
  8. Top the creamy pasta with sliced Cajun chicken. Garnish with fresh parsley and extra Parmesan if desired. Serve immediately.

Notes

  • For extra heat, add more Cajun seasoning or a pinch of cayenne pepper to the sauce.
  • Try substituting the heavy cream with half-and-half or a lighter cream for a less rich version.
  • If you prefer a smoky flavor, consider using smoked paprika in the seasoning mix.
