Ingredients

  • 1 9-inch pie crust (store-bought or homemade)
  • 1 cup cooked salmon, flaked (can use canned salmon)
  • 1/2 cup shredded cheese (e.g., Swiss, Gruyère, or cheddar)
  • 3 large eggs
  • 1 cup heavy cream or half-and-half
  • 1/4 cup chopped green onions or leeks
  • 1 tablespoon fresh dill (or 1 teaspoon dried dill)
  • Salt and pepper, to taste
  • Optional: 1/4 teaspoon smoked paprika for added flavor

Instructions

  1. Preheat the oven to 375°F (190°C). If using a raw pie crust, place it in a 9-inch pie dish and par-bake it for 8 minutes. Let it cool slightly.
  2. Evenly spread the flaked salmon over the bottom of the crust. Sprinkle the shredded cheese and green onions (or leeks) on top.
  3. In a medium bowl, whisk together the eggs, cream, dill, salt, pepper, and smoked paprika (if using) until well combined.
  4. Pour the egg mixture over the salmon and cheese in the crust.
  5. Bake for 35–40 minutes, or until the quiche is set and lightly golden on top. A knife inserted near the center should come out clean.
  6. Let the quiche cool for at least 10 minutes before slicing and serving.
