Instructions

  1. Prepare the Brussels Sprouts: Trim and halve the Brussels sprouts. Heat 1 tablespoon olive oil in a skillet over medium heat, then sauté the sprouts until tender and lightly golden, about 6–8 minutes. Remove them from the skillet and set aside.
  2. Cook the Pasta: Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Reserve 1/2 cup pasta water, then drain the pasta and set aside.
  3. Cook the Salmon: In the same skillet, add remaining olive oil. Place salmon fillets skinless side down and cook for 4–5 minutes per side until opaque and flaky. Remove salmon and let cool slightly, then break into large chunks.
  4. Make the Creamy Sauce: Reduce heat to low. Add minced garlic to the skillet and sauté until fragrant, about 1 minute. Pour in heavy cream, then stir in Parmesan cheese, lemon zest, and lemon juice. Stir continuously until the cheese melts and sauce thickens slightly. Season with salt and pepper to taste.
  5. Combine and Serve: Gently fold Brussels sprouts and salmon chunks into the sauce. Add cooked pasta and toss, adding reserved pasta water a little at a time until sauce coats pasta smoothly. Sprinkle with fresh herbs if desired and serve immediately.
