Description

Roasted artichokes with garlic butter are a delicious and elegant side dish or appetizer. Tender artichoke leaves are infused with roasted flavor and served with a rich, garlicky butter for dipping.


Ingredients

  • 2 large artichokes
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 lemon, halved
  • 4 tbsp unsalted butter
  • 2 garlic cloves, minced
  • 1 tbsp chopped fresh parsley (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Trim the artichokes: cut off the top inch and the stem, remove tough outer leaves, and snip sharp tips off remaining leaves. Rub cut surfaces with lemon to prevent browning.
  3. Slice each artichoke in half lengthwise and remove the fuzzy choke with a spoon.
  4. Place artichoke halves cut-side up on a baking sheet. Drizzle with olive oil and season with salt and pepper.
  5. Cover tightly with foil and roast for 35–40 minutes, or until tender.
  6. Meanwhile, melt butter in a small saucepan over low heat. Add garlic and cook for 1–2 minutes until fragrant. Stir in parsley if using.
  7. Serve artichokes warm with garlic butter on the side for dipping.

  • You can add herbs like thyme or rosemary before roasting for extra flavor.
  • Choose artichokes that are firm, heavy for their size, and have tightly packed leaves.
