Description
Roasted artichokes with garlic butter are a delicious and elegant side dish or appetizer. Tender artichoke leaves are infused with roasted flavor and served with a rich, garlicky butter for dipping.
Ingredients

- 2 large artichokes
- 2 tbsp olive oil
- Salt and pepper, to taste
- 1 lemon, halved
- 4 tbsp unsalted butter
- 2 garlic cloves, minced
- 1 tbsp chopped fresh parsley (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Trim the artichokes: cut off the top inch and the stem, remove tough outer leaves, and snip sharp tips off remaining leaves. Rub cut surfaces with lemon to prevent browning.
- Slice each artichoke in half lengthwise and remove the fuzzy choke with a spoon.
- Place artichoke halves cut-side up on a baking sheet. Drizzle with olive oil and season with salt and pepper.
- Cover tightly with foil and roast for 35–40 minutes, or until tender.
- Meanwhile, melt butter in a small saucepan over low heat. Add garlic and cook for 1–2 minutes until fragrant. Stir in parsley if using.
- Serve artichokes warm with garlic butter on the side for dipping.
Notes
- You can add herbs like thyme or rosemary before roasting for extra flavor.
- Choose artichokes that are firm, heavy for their size, and have tightly packed leaves.
- Garlic butter can be replaced with a lemon aioli or vinaigrette for variety.
